On Season One, Episode Five of Homemade Live! (“Late Night Bite,”) NFL legend Reggie Bush and his wife Lilit join host Joel Gamoran to make Bush’s ultimate late night treat.
Serves 4
INGREDIENTS
FOR THE PICKLED RED ONION:
- 1 red onion, thinly sliced
- ½ cup red wine vinegar
- ½ cup water
- 2 tablespoons sugar
- 1 teaspoon salt
- ½ teaspoon black peppercorns
FOR THE GRILLED CHEESE:
- 4 slices of Texas toast
- 4 slices of provolone cheese
- 2 cups leftover braised short ribs, shredded
- Precooked and sautéed broccolini or other green vegetable
- Butter for grilling
- Store-bought horseradish cream sauce
- 4 large eggs
- Salt and pepper to taste
TO PREPARE
PICKLED RED ONION
STEP ONE. In a small saucepan, combine the red wine vinegar, water, sugar, salt, and black peppercorns. Bring the mixture to a boil over medium-high heat and add the red onions. Simmer for 5 minutes and then let cool. Put in a jar or other container and refrigerate.
GRILLED CHEESE
STEP TWO. Heat a griddle and add chopped shredded braised short ribs and leftover broccoli raab or other greens. Once hot, top with cheese slices and allow to melt
STEP THREE. Butter and griddle 4 slices of Texas toast. Spread with horseradish cream sauce. Distribute the short ribs, greens with melted cheese amongst the 4 griddled slices of toast.
STEP FOUR. In a separate non-stick skillet, melt some butter or use cooking spray over medium heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set but the yolks are still runny, about 2-3 minutes.
STEP FIVE. Place an open faced grilled cheese sandwich on a plate. Carefully slide a fried egg on top of each sandwich. Add a few slices of the pickled red onions for a tangy kick.
