If you’re thinking about grilled cheese in Boston, you probably have one name on your mind: Roxy’s. After making history as the first food truck in Boston, Roxy's has become the go-to spot for this delicious combination of bread, melted cheese, and all sorts of exciting ingredients.

With two brick and mortar locations in Allston and Central Square in addition to its food trucks, Roxy’s has been able to expand their menu and offer not just innovative grilled cheese, but also burgers, fried chicken, even ice cream and cookies.

To celebrate National Grilled Cheese Day, we decided to take a walk over to Roxy’s in Allston to learn more about how they’ve perfected our favorite comfort food.

All of Roxy’s grilled cheeses are served on Iggy’s organic pain de mie bread. Like the Three Cheese (pictured above), which is a perfectly heavenly mix of Vermont cheddar, muenster, and fontina.

“Grilled cheese can be as simple or as complex as you’d like it to be,” said Tess Jutras, Roxy's Social Media Manager. “We like to keep our classics the same as Mom made — or just a little bit better — so it's familiar to our guests, and sparks joy when it's available to them.”

Roxy’s decor takes inspiration from their food truck origins, where customers enjoy their meals outside. “Food trucks thrive in beautiful, sunny weather," said Jutras. "I think creating that kind of warmth in our restaurants was key to highlighting our roots."

One of the most popular menu items is the Green Muenster, featuring muenster cheese, crispy bacon and creamy homemade guacamole - a real home run for fans of everything savory. For a well-rounded meal, Roxy’s hand cut truffle fries are almost as legendary as their grilled cheese. “Our truffle fries have been a staple since we started on our trucks all those years ago, and pair really well with our comfort food meal options,” Jutras said.

The Allston (pictured above) is probably the least traditional grilled cheese on the menu, but a fitting tribute to the locale’s neighborhood. It’s a mouthwatering combination of melted goat cheese, fig jam, sweet caramelized onions, and arugula.

Roxy’s loves to think up unexpected combinations for their grilled cheeses, evident with the Hot Honey Bacon made with crunchy bacon and glistening honey. When it comes to sides, they keep it simple allowing the sandwich to be the star of the meal. “Tomato soup is a classic pairing," said Jutras."A nod to the nostalgia associated with eating a grilled cheese as a kid."
