Food Trip with Todd English
Tucson: La Comida Mexicana
Todd English learns to make tortillas in downtown Tucson, Ariz., and visits chef Carlotta Flores at El Charro Café to observe her preparation of carne seca, air-dried beef. After a conversation with chef Douglas Rodríguez about nuevo Latino cooking, Todd stops at Norma's Cakery for a tres leches cake to offer the hostess at a traditional family fiesta. Todd returns to the kitchen to create his own dish: a whole-wheat tortilla with carne seca "à la minute," with a quickly seared shrimp ceviche and a prickly pear margarita.
