The beauty of this recipe is twofold. It’s a one-pot meal, plus the ingredients (except perhaps for the sushi rice) are regular, everyday kinds of things. That’s what your beverage pairing should be too — simple, and within easy reach. Ming’s team recommends a German Riesling (SA Prum Essence Riesling at $13 retail) though a spritzer flavored with orange, lemon, or even ginger would work nicely too. Keep it light, fresh, and aromatic. Tip: if you do go the spritzer route, remember to pop your glasses in the freezer for a few minutes before pouring the drink. That keeps your beverage nice and cool.
