"Think mushrooms and some people immediately think pinot noir. But with eggs? And pinot noir, which tends to be on the expensive side, paired with morel mushrooms, which are definitely on the expensive side? Time for a rethink.
At the moment, we’re at the tail end of the morel mushroom season, so for this recipe, let the mushrooms themselves shine. Since mushrooms are known as the “meat of the vegetable kingdom,” you still want to highlight their sensory characteristics like earthiness and texture. Normally you do that with pinot noir, but for a change of pace, try a sparkling wine made of pinot noir grapes such as Mumm Napa Blanc de Noir ($18). The sparkle and refreshment of this choice will pair very nicely with the warm eggs of the frittata.
